Sadly enough, there aren’t a lot of books out there that are fairly realistic and accurate, the current topic of another discussion btw.

I would say start with reading the old, unabridged accounts of the Knights of the Round Table and other medieval man vs. dragon accounts. You can usually gain useful information from those. Also, dragons appear in religious writings and myths. Just make sure to read older versions of said writings and myths, the older the better. New versions are often distorted by interpretation and bias.

Well depending on what you can get a hold of or not, as Falconer said look for older works. Most "modern" works are mixed with different ideas.

But 'The Element Encyclopedia of Magical Creatures' is a good one. I have this one, it does cover a large range of creatures. But the appendix will have to help with other stuff to look for.

Unfortunately, much of Dracology is conjecture at the moment. Try looking at the ancient myths, as Falconer said, and looking for similarites between them.
